Artichokes in oil are a fantastic product: the cooking time in vinegar brine allows them to reach a firm yet soft texture, with the artichoke remaining tough on the outside and tender at the heart. The remaining flavor comes from the seasoning and Colle di Seta extra virgin olive oil. The product is ideal for appetizers and starters. The selection and cleaning of the artichokes are strictly done by hand. The mission is to reach the heart of the artichoke by removing the outer components. The artichokes are then cooked in a solution of water and vinegar. Afterwards, the buds are drained and cooled, seasoned, placed in jars and filled with extra virgin olive oil.
