This is a fairly savory wine, as some of the grapes come from vineyards in Balata di Baida characterized by very mineral-rich soils. These characteristics make it an evocative wine that encapsulates all the mountainous Sicilian identity, summer breezes, and Sicilian citrus. Excellent as an aperitif.

Recommended pairings: Fish, shellfish and crustaceans, fresh cheeses, cured meats, eggs and risottos, pasta with light sauces, chicken, fresh pasta.
