Zucchini in Oil

While zucchini are already being harvested in the spring on the coast, here we have to wait until the beginning of summer. Zucchini in oil are a delicate product in terms of balance. A few extra minutes of cooking can affect their texture, and an incorrect proportion of water and vinegar can affect the taste. During processing, all precautions must be taken. Zucchini in oil are ideal for typical appetizers, Puglia-style aperitifs, and more! The zucchini are peeled, washed and cut into strips. They are then cooked in a solution made of wine vinegar, water, and salt. Once cooked, the zucchini are drained and cooled. After seasoning, they are placed in jars and filled with extra virgin olive oil.
