Creamy Turnip Soup

Turnip greens are the queens of winter vegetables. It's almost a tradition. Turnip greens are fully part of the identity traits of Apulia, and even more so of the province of Bari. This cream soup preserves the well-known sensory characteristics of the raw material. Extra virgin olive oil completes the composition of this typical peasant dish. The combination of turnip soup inevitably falls on "orecchiette", a traditional Apulian pasta shape. During the mixing of the dish, part of the cream soup stratifies inside the "orecchietta", which when tasted becomes almost like a stuffed pasta shape! The turnips are peeled, washed, and then cut. They are then cooked in boiling water. Once cooked, the turnips are drained and cooled, and then transformed into cream soup with the addition of cooking water, extra virgin olive oil, salt, and a pinch of garlic.
