Cherry Blossom

Cherries in Puglia are a gift to be enjoyed fresh or transformed. It is a delicate crop in all its phenological stages, from flowering to harvesting. For this reason, this jam helps us to give dignity to the work in the fields and to such a precious fruit. Fior di Ciliegie is a light version of the classic Puglian cherry jam. It contains a high percentage of fruit (70-75%) and a minimal addition of sugar. As a testament to this, the taste of the product retains the typical slight acidity of the fruit. An ideal product for delicious breakfasts and for filling cakes and tarts. Cherries are sifted and washed, then passed and pitted until a thick puree is obtained. The puree is then cooked and during cooking, a minimal amount of sugar and fruit pectin is added.
