100% Monovarietal Coratina. It is a medium-sized and vigorous tree that adapts well to various soils. Being fairly resistant to all diseases, it also adapts well to organic farming. The oil obtained from the pressing of these olives is usually rich in polyphenols, with low peroxide values and extremely low acidity; it is a yellow-green oil with a very intense and fruity flavor, slightly bitter due to the high concentration of oleuropein and typically pungent due to the high concentration of polyphenols. It is a superior category olive oil obtained directly from the olives and solely by mechanical processes, strictly with cold extraction. It is the oil from well-cared-for and beloved olive groves.
