Red onion compote

We begin with the red onions of Acquaviva, cultivated in our camps. Following a recipe given by a chef of the same territory, we reach one of our most demanded products. Its taste is the right balance between sweet, sour and the known particularity of onion. A delight. Of this product, we assert the non-excessive addition of sugar. The addition of pectin extracted from fruit allows instead to reach the desired consistency. What’s obtained is a product which is excellent for pairings with fresh and aged cheese, forming delicious appetizers and starters. Onions are peeled, washed and then cut into small bits. Following, they are macerated in vinegar before being cooked. During the cooking phase, sugar and fruit pectin are added, the latter as thickener.
